Become known for your fudge
This is actually my Mother-in-law Flo's recipe, but years from now I will have delivered it to so many holiday events and family gatherings that maybe it may become known as my fudge instead of Flo's fudge. And if it stay's Flo's fudge, that's okay because she was a neat lady.
It's modified from the back of a Domino's Confectioners 10-X Sugar box from so long ago. It's not on their boxes anymore and was not on their website when I checked. Besides, we changed it a little.
Utensils: - 1 Quart-sized saucepan
- 1 8x8 inch disposable pan
- 1 large spoon
- 1 scraper
Ingredients:
- 6 tablespoons butter
- 1/4 cup milk
- 1 tablespoon vanilla extract
- 1/2 cup unsweetened cocoa
- 1 lb. Domino's Confectioners 10-X Sugar
- 1 cup chopped walnuts, if you like nuts.
Instructions:
- Butter the bottom and sides of an 8x8inch aluminum foil disposable pan.
- Melt 6 tablespoons of butter in a wide-bottomed quart saucepan over low heat.
- Stir in 1/4 cup milk.
- Stir in 1 tablespoon vanilla extract.
- Stir in 1/2 cup unsweetened cocoa.
- Turn the burner up to just below medium and, stir constantly.
- Add approximately one quarter of the confectioners sugar and continue to stir constantly until smooth.
- And the next quarter, the third quarter, and the last of the confectioners sugar in the same way, stirring constantly until smooth, moving the spoon all over the surface of the saucepan to prevent hot spots from burning the mixture.
- Note: The secret of success is to continue stirring constantly until the mixture reaches a temperature where it turns from a dull finish to a shiny finish, almost bubbles, and becomes easier to stir.
- When shiny, if walnuts are desired, quickly add them to the mixture and stir to mix well.
- Quickly spread the mixture into the prepared pan. Shake the pan to even the fudge.
- Let the fudge set in a cool place.
- Scrape the dregs from the saucepan into some foil and squeeze into a block for the cook to snack on.
- Make another batch, because one batch is not enough.
- Cut the cooled fudge into squares.
The recipe serves a small family or one teenager.
